Buckwheat is heavy and dark like molasses. Blueberry is dense, sweet and fruity. Some varieties are whipped into a thick spread that melts on your tongue—rich, dense, luxe. These are some of the gourmet honeys cultivated by Andrew Coté, the founder of Andrew’s Honey. A fourth-generation beekeeper, Andrew has kept bees in New York City since 2006, when a community garden in the East Village asked him to resurrect their “dead” hives. The founder of the New York Beekeepers Association, which has hundreds of members, Andrew is a key player in the movement towards urban farming, local food sourcing and artisanal production in NYC. Most Mondays and Wednesdays you can find him bantering with customers, sometimes in Japanese, at his booth in the Union Square Greenmarket in that oh-so-New York way—familiar, friendly, information packed, a bit brusque. His bees are quintessential New Yorkers too: busy, buzzing with energy, a little intimidating until you get to know them.
